Three Bean Soup
700g Assorted dried beans (e.g cannellin, black, kidney,
pinto) soaked overnight and drained
1/2 tsp Achiote paste
1 tbsp Dried basil
2 tbsp Sea salt
1 tsp Black pepper
1/4 tsp Cayenne pepper
4 Dried bay leaves
2 Red peppers
1 Green pepper
1 Mild green chilli, deseeded and diced
3 Large tomatos, diced
3 Carrots, thinly sliced
1. Put the beans in a large saucepan with enough water to cover. Bring to boil, then simmer for about 30 minutes until they begin to soften.
2. Add the achiote, basil, salt, black pepper, cayenne and bay leaves. Cook for about an hour.
3. Stir in the peppers, chillies and tomatoes, and cook for about 10 minutes.
4. Add the carrots and cook for another 5 minutes. Season to taste and serve.
